Bake an Apple Cake!

I felt like baking the other day, and it become an apple cake, which probably can be counted as LCHF.
It tasted quite good, but next time I make this cake I think I will try to rasp down the apples and mix all ingredients, except  for the appples, together and take a little more honey in the mixture.



Apple Cake

2-3 apples
25 gram butter
2 deciliter (200 gram) grinded hazelnuts (or 1 dl coconut flakes and 1 dl grinded almonds)
1 egg
Cinnamon (at your leisure)
Liquid honey (at your leisure)

Grind the nuts into flour in a mixer. Add thin sliced apples in a greased fireproof baking tin. Sprinkle with cinnamon and drizzle with honey over. Melt the butter, whisk the egg, and mix with the hazelnut flour into a grainy substance. Put a thin layer over the apples. Put it into the oven at 200 degrees C for about 20 minutes until the cake is golden brown and a bit hard. Serve with whipped cream flavoured with a little vanilla aroma.

This I like =)


Quick Salted Cucumber (gherkins).

Approximately one kilograms Cucumber
12 cup (deciliterl) cold water
1 cup (deciliterl) salt
1 tablespoon granulated sugar

The two ingredients below can be excluded:
3-4 dill crowns (I used dried dill)
4-5 currant leaves

Wash / brush clean cucumbers and "peck" them 3-4 times with a fork.
Add them down in a bowl with a lid that holds all the cucumbers.
Measure out the water and mix in salt and sugar.
Stir until sugar and salt are completely dissolved.
Dowse over the salt-sugar syrup over the cucumbers, and let everything rest for at least two days before eating them.

Now they are ready to be eaten.

Slice thinly and arrange on e.g. a liver pâté sandwich.
The cucumbers taste even good with a piece of meat.

The cucumbers will remain fresh for about two weeks in the fridge (if not eaten before then of course).

My Enemy # 1 at the moment

This time of the year is a really agonize for me, and especially for my eyes. They are itching and running from early morning to late evening. I'm taking eye dropps and other drugs but now is the time of the year that's the most irritating for me because of my grass allregy.
I'm allergic up on all kind of grass, so I can't escape from it. This is the time of the year that you want to be outside as much as possible, but I stay inside as much as possible. Buhu!
Well that's life. I love spring and autumn, so I try to be out a lot then instead.

My enemy # 1!

The Elder flowers is blooming right now. So get out and pick the flowers and make some good nice elder blossom juice. The juice is nice to mix in a cold drink. I use to mix about 1 liter of cold (home made) club soda with 1 deciliter elder blossom juice and then about 1-1½ dl Baccardi Rum. Of course you can exclude the rum if you just want something cold to drink in summer heat.
Elder flower juice
about 2 1 / 2 liters
Ingredients:
40 flower bunches
3 lemons
2 liters of boiling water
1 1/2 kg Sugar (a lot of sugar!!!).
50 g of citric acid

Rinse the flower bunches and place them on a towel to drain.
Place the flowers in a bucket or large bowl.
Wash the lemons thoroughly and slice them thinly.
Add lemon slices on the flowers.
Boil water and pour over the flowers and lemons.
Add the sugar and stir until it dissolves. Stir in the citric acid.
Cover the bucket/bowl and let stand for 3 days.
Strain!
Pour into well-cleaned bottles.

Store in refrigerator or freeze the juice. You can also add a cinnamon stick or 1 tablespoon grated fresh ginger to get a taste of the juice extraction.

The Elder flowers can be replaced by lilac flowers or black currant leaves.

Sunshine Pie á la Eva

Sunshine Pie, or You take what you have Pie =)



Filling:1 pack with bacon, about 140 gram
6-8 fresh mushrooms in small pieces (or 1 small tin in slices)
About 1½ dl parboiled broccoli in small bouquets
About 100 gram of Feta cheese in small squares
1 orange (plum) tomato in thin slices
½ leek in thin slices or ½ onion of optional type

Egg mixture:3 eggs
200 gram (2 dl) 34% Crème Fraiche
½ dl whip cream
Some salt and new grounded black pepper

Cut the bacon with a scissor or cut with a knife into small pieces.
Clean the mushrooms and cut into small pieces or slices.
Chop the leek or onion.
Put all these ingredients into a pie tin, and roast it for about 5-10 minutes while you mix up the egg mixture.
Put the rest of the ingredients, (broccoli, Feta cheese and tomato) into the tin and pour over the egg mixture.
Oven heat: 200°C (392°F) for about 30 minutes.
Serve with a salad and home made Rhode Island salad sauce/dressing.

Rhode Island salad sauce/dressing:200 gram (2 dl) 34% crème fraiche
3-4 tbsp real mayonnaise
3-4 tbsp tomato purée
salt and new grounded black pepper

Good Food!

Got this recipe from my dear friend Lena some weeks ago. I modified the recipe a little bit so it fitted my taste.

Pork Tenderloin or Chicken stew.
4 pers.

1 pork tenderloin or 4-5 chicken filet
140-280 gram bacon (about 16 slices)
1-2 yellow pepper
300 gram fresh sliced mushrooms
3 deciliter whipping cream
1 jar cream cheese (anyone that you like)
2 bouillon cubes or 2-3 tbsp calf liquid meat extract
salt pepper

Fry the fillets and place them in ovenware. Fry the bacon with the yellow pepper and mushrooms. Pour in cream, cheese, bouillon and let it boil together. Dilute contingently with water. Pour the sauce over the meat and let it slimmer in the oven at 200°C (392°F) for about 20 minutes until the meat is ready.
Serve some boiled vegetables to this dish, e.g. Haricots verts, Broccoli or Cauliflower.

Fläskfilé eller kycklinggryta.

4 pers.

1 fläskfilé eller 4-5 kycklingfiléer
1-2 pkt bacon
1-2 gul paprika
Lite färska skivade champinjoner
3 dl vispgrädde
1 burk mjukost (vilken som helst som du gillar)
2 buljongtärningar eller 2-3 msk kalvfond
salt och peppar

Bryn filé och lägg i en form. Stek bacon med paprika och svamp. Häll på grädde, ost, buljong och låt det koka ihop. Späd ev. med vatten.
Häll såsen över köttet och låt det puttra i ugnen på 200° i ca 20 minuter tills köttet är klart.
Servera någon kokt grönsak till, t ex haricots verts, broccoli eller blomkål.

Smaklig måltid!

Mandel eller hasselnötsnöttårta

Gräddtårta med mandel -eller hasselnötsbottnar och chokladmousse -och jordgubbsfyllning.
ca 10-12 portioner
Tårtan kan med fördel göras dagen innan den ska serveras och garneras samma dag som den ska ätas.
Ingredienser till 2 bottnar:
4 ägg, 100 g flytande smör (eller vanligt som smältes), 1 dl vispgrädde, 200 g mald mandel eller hasselnötter (gärna malt till mjöl), 2 tsk vaniljsocker, 2 tsk bakpulver

Vispa ihop ägg, smör och grädde. Blanda alla torra ingredienser, mandel (eller hasselnötsmjöl), vaniljsocker och bakpulver. Blanda ner de torra ingredienserna i äggsmeten och rör om ordentlig så att allt blandas väl.
Dela smeten i två lika delar och häll i pajformar som är ca 24 cm i Ø och grädda varje botten i 175° i 15 minuter.
Låt svalna!

Chokladmousse:

100 g mörk choklad - 70%, 1 äggula, 2 msk starkt bryggt kaffe, 3 dl vispgrädde

Bryt chokladen i bitar och smält i mikrovågsugn. Blanda i äggulan och kaffet. Låt svalna!
Vispa grädden till lätt krämig konsistens. Blanda ner chokladsmeten i grädden. Ställ kallt en stund.


Garnering och fyllning:

5 dl vispgrädde, ca ½ liter jordgubbar (eller andra bär t ex hallon), ev. någon mörk choklad i tunna skivor (finns kanske att köpa i din mataffär – fick mina som är på bilden av en kompis i julas), ½-1 liten burk kokosmjölk (att dränka in bottnarna i så de inte blir torra och tråkiga).
Dränk in bottnarna med en aning kokosmjölk, akta så de inte blir för mycket – ”lagom är bäst”. Sortera ut ca 8-10 av de finaste jordgubbarna till att garnera tårtan med och dela dem på mitten. Spara en stor fin ”gubbe” att ha i mitten. Resterande jordgubbar skärs i tunna skivor och fördelas ut på den undre bottnen. Klicka nu ut chokladmoussen ovanpå de skivade jordgubbarna och bred ut till ett jämnt lager. Lägg på den andra bottnen och spritsa sedan på den vispade grädden och garnera med jordgubbar och chokladflarnen.

Som alltid...ät med måtta!
Tårtan bör räcka till minst 12 personer.

Almond pancakes

I’m a great lover of pancakes, but since I started to eat according to the LCHF a year ago, I haven’t been eating one single pancake. Today I searched at the Internet and found some interesting recipes. I looked them all through and took a little bit here and a little bit there so they would suit me.

So here’s my alternative on LCHF pancakes:
4 eggs, 2-2½ deciliter whip cream, 100 gram grounded almond (should preferably be like flour), about 1-2 ml measuring spoon (krm) vanilla-flavoured sugar, a pinch (nypa) of salt and one ml measuring spoon baking powder. Use real butter to fry in.

Whip it all together and bake on medium heat in a small frying pan. Serve with whipped cream, raspberries or some other berries.

These pancakes were really delicious, and the smell that was spreading in my kitchen was very pleasant.

I can really recommend you to try these titbits.

Afternoon

This is what we had for dinner today (afternoon). It's a stew made of fillet of pork and lots of other goodies. The potatoes you can see in the background is for my husband and the cauliflower is for me =)

Eva's Fillet of Pork Stew
Here are the ingredients for 2-3 persons:
1 fille of pork, about 20 small mushrooms, 1 leek, 1 dl 34% crème fraiche, 1-2 dl whip cream, 1-2 tbs mustard, 1-3 tbs Chinese Soya, some black pepper and butter to fry it all in.

Observe! No salt! The soya is salt.

Sauté the fillet, leek and the mushrooms. Put it all in a casserole and muddle up the rest of the ingredients and let the stew simmer for about 30 minutes. Meanwhile the stew is simmering boil the potatoes and the cauliflower.

If you try this recipe I hope you will enjoy it and have a tastful dinner ;-)

1 fillet of pork.

1 leek and about 20 small mushrooms.

About 1 deciliter 34% crème fraiche and 1-2 deciliter whip cream, no light products.

Simmer for about 30 minutes.

Potatoes (for my husband).

Cauliflower (for me)

Dinner Today

Today we had oven baked salmon fillets, haricots verts (green beans) and a crème fraiche sauce.

Here’s the ingredients and how to do:

4 salmon fillets (4 st laxfiléer)
Salt and lemon pepper
½ a fine shred leek (½ finstrimlad purjolök)
butter to fry in (smör att steka i)

Cold sauce:

2 dl 15% crème fraiche
1 dl whip cream (1 dl vispgrädde)
2 tbs mayonnaise (2 tsk majonnäs)
About 1 tbs of dried or fresh dill (ca 1 msk torkad eller färsk dill
salt

Boiled haricots verts, green beans (kokta gröna bönor)

Salt and pepper the salmon on both sides and grease the oven ware with butter or oil. Fine shred the leek and put it on top of the salmon or if you prefer on the side of the salmon. Put it all in a 200° C hot oven for about 15-20 minutes.
Meanwhile the salmon is in the oven blend together the crème fraiche sauce and boil the green beans.

Wow!



Idag visade vågen att jag har gått ner 15,5 kg sedan början av december 2007. Sakta men säkert går det nedåt. Vad glad jag blir!
Det går som sagt inte fort, men det har tagit mig mer än 20 år att lägga på mig alla extra kilona, så om det så tar mig två år eller mer att bli "normalviktig" så får det göra det. Huvudsaken är att det går på rätt håll.

LCHF har blivit min räddning även om det kan vara svårt ibland att äta det till punkt och pricka. Det är inte lätt när man lever ihop med en man som är van vid "saus å päror" - översättning - "sås och potatis" ;-) och som tror att det är något hokus pokus jag håller på med.
Och det är inte lätt att få andra att förstå heller för den delen. Jag får förklara att jag äter det mesta som de gör, men undviker:

Potatis, ris, pasta, mjöl, bröd (spannmålsprudukter), frukt och majs (innehåller för mycket socker=stärkelse), grönsaker som växer under jord och absolut inga lightprodukter.
Idag hällde jag ca 2 msk vispgrädde i min morgonfil, och den blev faktiskt riktigt "len" och god. Att jag hällde vispgrädde i min fil berodde på att jag inte hade några färdigkokta ägg och inte hann att koka några heller. Utan vispgrädden hade det blivit alldeles för fettfattigt. Jag brukar nämligen ha citronmajonnäs på mina ägg till min frukost i vanliga fall.

Min frukost brukar annars bestå av:

Ett litet fat med fil som jag strör 1 msk krossade linfrön, ½ msk havrekli och 1 msk rostade solrosfrön över.
1 delat ägg i två halvor med citronmajonnäs på halvorna.
1 skiva Wasa Fiber Plus (eller Finn Crisp Fibre) med mycket smör (eller Bregott) och en skiva gräddost och någon skinka på (Obs! Lager på lager).

En stor kopp kaffe med 1/3 mjölk och resten kaffe. Obs! Det ska vara 3%-ig standardmjölk.

När jag har ätit en sådan frukost står jag mig ända till långt in på eftermiddagen utan att bli hungrig stup i kvarten.

Till middag äter jag kött, fisk, fågel, ägg och skaldjur går också bra. Någon grönsak (broccoli, blomkål, gröna bönor - haricots verts eller isbergssallad, tomat och lite gurka) i lagom mängd och till det min egen crème fraiche sås/ dressing.

Ingredienserna till såsen är:

2 dl 15 eller 34 %-ig crème fraiche
½ dl vispgrädde
ca 1 msk Örtagårdskrydda eller liknande.

Today the scale showed that I have lost 15,5 kg (34,17 pounds) since the beginning of December. Slowly but safe it goes down. I’m so glad!
As I said, it doesn’t go fast, but it has taken me more than 20 years to put all these extra kilos on my body, so if it takes me two years or more to get a “normal” weight, so be it. The main thing is that the weight will go the right way. DOWN!

LCHF has been my rescue even if it can be very hard sometimes to eat exactly as I should. It’s not easy when you live together with a man who is used to sauce and potatoes, and thinks that it’s some mumbo-jumbo I’m doing.
By the way, it’s not easy to get other people to understand either. I’ve to explain that I eat most of what they do, but I try to avoid:

Potato, rice, pasta, bread (grain), fruit and corn (contents too much sugar=starch), vegetables that grows under the soil and absolutely no light products.
This is how my breakfast uses to look like:

A small plate with sour milk 1 tbs flax-seed (whole or crushed), about ½ a tbs oat bran and about 1 tbs roasted sunflower seeds.

1 egg in two halves and some lemon mayonnaise on the top.

1 slice of Wasa Fibre Plus (or Finn Crisp Fibre) with lots of purely butter (or Bregott) and a slice of fat cheese and some ham on top of that. (Layer on layer.)

A big cup of coffee with 1/3 of 3% milk and the rest coffee.

When I’ve eaten a breakfast like this I’m satisfied for many and many hours without getting hungry all the time.

For dinner I eat meat (beef, pork) fish, bird, egg and shellfish is also good to eat. Vegetables like broccoli, cauliflower, haricots verts or iceberg lettuce, tomato, and some cucumber in moderately amounts. To this I use to have my own sauce.

The ingredients to my sauce are:

2 dl crème fraiche (15 or 34 %) the fattier the better
½ dl of whip crème (not whipped)
1 tbs of herbs (fresh or dried) take herbs that you like.

Loin of Pork and Coleslaw


My dinner today was consisted by a broiled and chopped loin of pork (karrékotlett) and some homemade coleslaw. I’ve thought of doing this coleslaw recipe for a long time, and finally today I “came to shot” so to say.
It just tasted wonderful together with the loin of pork. Yum, yum!!!

Here’s the recipe of the coleslaw:

About 250 gram fine shred white cabbage.
2 deciliter of crème fraiche (15-34%)
2 tablespoons of mayonnaise
1-2 teaspoons of mustard
Salt and new minced black pepper

Slack the cabbage for about one minute in the microwave (or put it into some hot water for a couple of minutes). Just put the cabbage into a glass bowl or some other microwave safe bowl.
Fine shred the cabbage.

Blend together crème fraiche, mayonnaise, mustard, salt and pepper and in the end, the shredded cabbage.

I broiled the loin of pork slices in the oven for about 30 minutes with butter, soya, salt, pepper and some paprika powder.

Supper for Four!

Yesterday evening we invited our neighbours, Linette and Bengt for a chat and a small supper. We have lived as neighbours for 36 (!) years, and this was the first time we really got together like this.
Bertil and Linette went to school together as children, so it’s not that we haven’t known each other. It just hasn’t become of!!!!
Of cores we have seen each other for a short chat and a cup of coffee now and then through the years, but that’s all.
We had a very nice evening with good food (if I may say so) cheese, wine and beer. Coffee and a good liqueur chocolate for dessert.
I really do hope that it not will take another 36 years before we get together like this again ;-)

...and here's what we ate...
My "You take what you have" pie without the shell since I try to not eat any flour products...


...and a good salad with lots of goodies.

Here are the ingredients in the pie:

About 200 gram, (7,0548 ounces), of shred turkey meat, shred leek - about 15 cm (5,91 inches), a tin with mushrooms - about 125 gram (4,4092 ounces) parboiled broccoli in small bouquet.

Put all these ingredients in a pie tin with some butter and then put it all in the oven (+200°C - +390°F) while you mix together the baked eggs (äggstanningen).

4 eggs, 3 deciliter (10,14 fluid ounces) whipping cream (not whipped), 4-5 tablespoons natural cream cheese, salt and pepper.Beat all these ingredients together and poor over the meat, leek, mushroom and broccoli filling.

Put the pie in the oven (same degrees as before) for about 15-20 minutes. Serve a good salad with it.
I had iceberg lettuce, small shard leaves, cucumber in thin slices (without the wet inside), small yellow plum tomatoes, fresh mushrooms in thin slices, a small peeled Clementine in thin slices and feta cheese in peaces.

I also had a good homemade dressing that included 2 dl (6,76 oz ) 15 % crème fraiche, about ½-1 dl (3,38 oz) whipping cream (not whipped) and some herbs (Knorr’s örtagårdskrydda, ca 2 tsk).

Don’t be afraid of all this fat. I’ve lost 14 kilograms, (30,86 lbs) with this kind of food (LCHF) ;-)

Bag Cheese
Pour 3 dl (10,14 oz) sour cream in a coffee filter and let it pass during the night in room temperature.
Mix the cheese curd with spices or herbs after your own taste.
Bag cheese can be used as sandwich-spread, in a salad or as dessert. It is good natural or mixed with spices and herbs, for example finely-chopped parsley, chives or garden cress, fruit or berries.

I used chives and salt after my own taste.
I think that this homemade fresh cheese tastes exactly as Philadelphia cheese.
Yum, yum!

My New Kitchen Appliance

I bought my self a new kitchen machine about a week ago, a raw juice centrifuge, or a juicer, or what ever.
On Mondays we get a whole bunch of advertising sheets in our mail box and one is from a big food store called Maxi were I use to shop. Last week this Philip’s Juicer was in the ad-sheet, shining and looking at me saying: “Buy me”!
Well, of cores it wasn’t exactly like that but almost, because I’ve thought for a long time that I would like to have one just like that. So why not make a deal when I had the chance. It was also $15 (100 sek) cheaper than normal =)

This is my Juicer. Not as big as Jason's but big enough for me ;)

Here's "The Swedish chef" (you probably know him from The Muppet show) with a big glas of fresch pressed juice. Today I had:

4 big oranges – just peel off the orange
2 apples
1 beetroot - peeled
8 big carrots – peeled
And a small thin slice of ginger
All in all this became about 10 dl of pure juice. Nothing less than a vitamin bomb ;)

Dinner

Last Saturday we had some friends over for dinner.

To begin with we had small rolls made of flatbread (tunnbröd). Inside the rolls I had crème fraiche, two boiled and chopped eggs, chopped chive, chopped shrimps, a pinch of salt and pepper.

For main course we had salmon fillet (laxfilé) baked in the oven. On top of the salmon I had salt and lemon pepper, crème fraiche, whip cream, about half-half, chopped chive (gräslök), browned chopped leek (brynt purjolök) and cucumber (gurka) in small cubes.

Bake the salmon in 225°C (437°F) about 6-8 minutes. Pour over the cream and the chopped ingredients and bake for about 8-10 minutes more.

To this we had also Haricots verts, boiled potatoes
and a green salad with lots of different ingredients.


For dessert I had made a fruit salad with whipped
cream, meringue and small chocolate balls on the top.

All in all it was a very nice evening with 'old' friends.

Bert Karlssons SMALA SEMLOR

TV-Program:Förkväll

Ingredienser till 16 portioner :

50 g jäst
3 dl havremjölk eller sojamjölk
7 dl siktat dinkelmjöl
1 dl fullkornsmjöl av dinkelhonung efter smak
75 g smör
1 ägg

Fyllning:

100 g sötmandel
honung eller agavesirap efter tycke
inkråmet av bullen
3/4 dl grädde

Gör så här:

Låt degen jäsa under duk i ca 40 minuter.
När du rullat bullarna, lägg dem på en bakplåt och låt dem jäsa ytterligare 30 minuter.
Sätt ugnen på 225 grader.
Pensla bullarna med ägg när de har jäst färdigt och grädda dem i 10 minuter.
När bullen har svalnat skär du av ett lock på den.
Fördela fyllningen i bullarna.
Vispa grädden och lägg en klick i varje.
Lägg på locket.

Ät och njut!

Jag blev lite inspirerad av Judys "matblogg", så här kommer ett recept på en jättegod och lättlagad soppa som vi hade till middag igår ;-)
Nicolasoppa
2-4 pers.
3-5 hg blandfärs, 1 stor purjolök, 4-6 dl strimlad vitkål, 2-4 msk senap, 1 liter buljong (1 liter vatten+2 buljongtärningar), 1-2 msk Kinesisk Soya, salt och peppar.
Var försiktig med saltet! Både soyan, senapen och buljongen är salt.
Bryn färsen, strimla vitkålen och skär purjon i bitar. Bryn vitkålen och purjon ihop med färsen. Häll i buljong, senap, soya och kryddor. Låt koka ca 15-20 minuter.
Servera en god ost smörgås till, gärna knäckebröd.

I became a little bit inspired by Judy's "foodblog", so here's a recipe on a very good and easy made soup that we had for dinner yesterday ;-)
Nicola soup
2-4 pers.
3-5 hg mixed minced meat (50/50 beef/pork), 1 big leek, 4-6 dl (deciliter) shredded cabbage, 2-4 tsp mustard, 1 liter bouillon (1 liter water+2 stock cubes), 1-2 tsp Chinese Soya sauce, salt and pepper.
Be careful with the salt! Both the mustard, soya and the bouillon is salt.
Brown the minced meat, strip the cabbage and cut the leek in pieces. Now, brown also the cabbage and leek together with the minced meat. Pour the bouillon, mustard, soya, salt and pepper into the saucepan. Let the soup boil for about 15-20 minutes.
Serve a good sandwich with chees, perhaps crispbread, to the soup
