Last Saturday we had some friends over for dinner.
To begin with we had small rolls made of flatbread (tunnbröd). Inside the rolls I had crème fraiche, two boiled and chopped eggs, chopped chive, chopped shrimps, a pinch of salt and pepper.
For main course we had salmon fillet (laxfilé) baked in the oven. On top of the salmon I had salt and lemon pepper, crème fraiche, whip cream, about half-half, chopped chive (gräslök), browned chopped leek (brynt purjolök) and cucumber (gurka) in small cubes.
Bake the salmon in 225°C (437°F) about 6-8 minutes. Pour over the cream and the chopped ingredients and bake for about 8-10 minutes more.

Oh YUMMMMM! Each course looks better and yummier than the last! I remember so fondly the wonderful lunches and dinners we enjoyed with you all on our visits: the salmon, the shrimp, etc, etc!! YUMMMM!
Vad gott det ser ut t o m för mig som inte äter fisk och skaldjur.

Jag har inte heller varit så där himla förtjust i fisk, men nu sedan man kan få så fina färdiga filéer så tycker jag att det smakar bättre än när man själv fick stå och filéa osv. Sedan beror det nog mycket på HUR man tillagar fisken. Det här är ju så enkelt och inte en massa panering mm.
Sill t ex kan jag för mitt liv inte äta. Det är ju rått!

Actually that's something I came to think about the other day, that there's something about everything one gets to eat at your place, and the best word I could come up with to describe it was FRESH!

Thank you for the salmon recipe! MMMMMMM......it sounds so good and fairly simple. I agree with Anna about the freshness of the food you serve, but then I equate the freshness with all of Sweden...is that not so?

Yes maybe it’s so with Swedish food (and perhaps other things too), but I always try to make things easy and not too complicated.
